Swiss Avocado Chicken Sandwiches

My husband taught me how to make these delicious sandwiches when we first got married. I was immediately in love with them and will start craving them if I haven't had them for a while. These are a little bit messy to eat but worth every bite!

French bread
1 onion, thinly sliced (white or yellow work well)
1 large green bell pepper, thinly sliced
Swiss cheese. sliced
1 large ripe avocado, sliced
2 chicken breasts, thinly sliced
Seasonings (I use garlic and seasoning salt)

Saute onion and green pepper in olive oil over medium-high heat until tender, stirring frequently. Add chicken and seasonings and cook until chicken is cooked through. Slice french bread and hollow out some of the insides so you won't have too much bread. Spread the insides of bread with mayo or miracle whip. Cover the bottom layer of bread with sliced Swiss cheese. Top with the chicken, onion, and green pepper mixture and top with avocado slices. Serve with your favorite chips.
