My friend Stephanie served this at a party she hosted and everyone LOVED it! It will be a regular at our house from now on. Thanks for sharing the great recipe Stephanie!
1 can black eyed peas, drained
1 can shoe peg corn, drained (You can also use sweet corn)
1 large green pepper, chopped
1 medium onion, chopped
1 jar chopped pimentos, drained
Mix above ingredients and set aside.
3/4 c. sugar
1/2 c. cider vinegar
1/2 c. vegetable oil
1 Tbsp. terriyaki sauce
Mix together and add above ingredients, blending well, refrigerate for several hours and serve with tortilla scooper chips. Drain excess marinade off before serving.
