Mom's Carrot Cake Cookies

My mom got this recipe from a neighbor years ago and has been making them ever since. Every once in a while I start craving these. I usually double this recipe and times the frosting glaze by four. (Because I like to make bigger cookies and frost them instead of drizzling the glaze over them.)

1 cup shortening
3/4 cup sugar
1 egg, beaten
1 1/4 cups ground carrots
1/2 cup flaked coconut
2 cups flour
1 1/2 tsp baking powder
2 Tbsp orange zest/peal

Blend shortening and sugar. Add egg, carrot, and coconut. Stir well. Mix and add dry ingredients. Add orange zest last.
Drop 1" balls onto cookie sheet. Bake at 375 for 10-12 minutes. Let cookies cool and then drizzle cookies with glaze.

1 Tbsp orange juice
1 Tbsp orange peal/zest
