These are a regular at our house! We love them!!! I usually make cheese or pepperoni calzones for the kids.
1 1/2 cups cooked chicken
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped celery (optional, I have never put this in)
1/4 cup pitted ripe olives, sliced or chopped (I use sliced)
1/2 tsp. dried basil, crushed
1/4 tsp. dried oregano, crushed
1/8 tsp. pepper
1/8 tsp. garlic powder
1/3 cup soft-style cream cheese with chives and onion (Sometimes I add a little more)
1 13.8-ounce package refrigerated Pillsbury classic pizza dough (In a can)
1 beaten egg
1 Tbsp. water
For filling in medium bowl combine chicken, Monterey Jack cheese, celery, ripe olives, basil, oregano, garlic powder, and pepper. Stir in soft style cream cheese. Set aside.
Cut dough into 6 squares on lightly floured surface. Divide chicken-olive filling among the squares. brush edges with water. Lift one corner adn stretch dough over to the opposite corner. Seal edges of dough well with tines of a fork. Arrange calzones on a greased baking sheet. Prick tops with a fork. In a small bowl combine egg and 1 Tbsp. water; brush over the calzones. Sprinkle with Parmesan cheese.
Bake at 425 degrees for 10-12 minutes or til golden brown. Let stand for 5 minutes before serving. serve with heated spaghetti sauce. Makes 6 calzones.
