Peanut Butter Cookies

















These are Kaylee's favorite cookies!

1 cup unsalted butter
1 1/2 cups peanut butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tsp. vanilla
3 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. baking soda

Cream together butter, peanut butter and sugars. Beat in eggs and vanilla.
In a separate bowl, sift together flour, baking powder, baking soda and salt. Stir into batter. Put batter in refrigerator for 1 hour.
Roll into 1 inch balls. Roll the balls in sugar and then flatten each ball with a fork, making a criss cross pattern. Bake in a preheated 375 degree oven for about 10 minutes until cookies are light brown on the bottom. For crispier cookies bake until light brown on top. We like ours soft and chewy.
