Eclair Cake

Easy Peanut Butter & Chocolate Eclair Dessert
This is another great recipe from my aunt Sue. I double the chocolate frosting recipe and use almost all of it.

1 lb box graham crackers
2 small packages french vanilla pudding
3 1/2 cups cold milk
1 9 oz container cool whip

Mix milk and pudding together, beat on medium speed for 2 minutes. After it thickens stir in cool whip. Layer bottom of 9x13 inch pan with whole crackers. Pour 1/2 of mixture on top of crackers. Put another layer of crackers and repeat ending with crackers on top.

1 1/2 c powdered sugar
5 tbsp cocoa
3 tbsp milk
2 tbsp oil
1 tsp vanilla

Mix well. Frost crackers quickly as it will start to set up. Let sit in fridge overnight or at least 8 hours to let crackers soften.
